Cheesy Gordita Crunch Tacos

Ready to elevate your next taco night? My family is obsessed with this Taco Bell copycat recipe. It’s cheesy, crunchy, delicious, and much healthier for you! This is all my kids want on taco night - try it out and I’m sure your family will love it too!

Makes 8 tacos:

Ingredients:

1 tablespoon olive oil or avocado oil

16 ounce frozen bell peppers (or 2 bell peppers, seeded and diced)

1 pound ground beef

1 taco seasoning packet (I love the Siete or Thrive Market brand)

1/2 cup water

8 hard taco shells

8 soft tortillas (I use Siete almond flour tortillas, but regular flour tortillas work great too)

1 cup shredded cheese

Toppings of choice: shredded lettuce, pico de gallo, sliced avocado or guacamole, salsa, etc.

Directions:

  1. Preheat your oven to 400 degrees.

  2. Heat oil in a large skillet over medium high heat. Add bell peppers and saute for 5-8 minutes or until bell peppers begin to soften and char slightly.

  3. Add ground beef and break it apart with a spatula as you cook. Continue cooking until meat is brown and no pink is remaining.

  4. Add taco seasoning packet and 1/2 cup water. Do a quick taste test and add any more salt or seasoning if you prefer. Keep meat warm while you prepare the tortillas.

  5. On 2 baking sheets, lay out your 8 soft tortillas. Divide your 1 cup of shredded cheese amongst the 8 tortillas. Bake in the oven for 3-4 minutes or until cheese has mostly melted. Then, immediately take out of the oven and place a hard taco shell on top of each soft tortilla. Press and fold the soft tortilla around the hard taco shell and lay it on it’s side. Bake in the oven again for 3 minutes.

  6. Divide meat evenly between the 8 tacos. Add any toppings you prefer and serve immediately as they are best when hot. Enjoy!
