Pizza Pie Spaghetti Squash

Serves 4-6

Ingredients:

1 spaghetti squash

1 tbsp olive oil

1/2 yellow onion, diced

1 pound ground beef

1 cup marinara or pizza sauce

1 tbsp Italian spice blend (or mixture of oregano, basil, and thyme)

2 teaspoons salt

1/2 tsp pepper

1 egg

1 cup shredded mozzarella

Optional - Turkey pepperonis for a topping

Directions:

  1. Start by preheating your oven to 400°F.

  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves on a baking sheet and drizzle with olive oil. Bake in the preheated oven for about 40-45 minutes or until the squash is tender and easily pierced with a fork. Alternatively, you can also cook a spaghetti squash in a crockpot if you have the time. Pierce the spaghetti squash (no need to cut it) a few times. Place it in the crockpot along with 1 cup of water and cook on low for 5-6 hours or on high for 3-4 hours. After cooking, the spaghetti squash will be able to be cut very easily.

  3. Once the spaghetti squash is cooked, use a fork to scrape out all of the strands and set aside.

  4. Next, heat the oil in a large oven-safe skillet over medium high heat. Cook your onion for 5-8 minutes or until it begins to soften and lightly brown. Add your meat and cook until no pink is remaining. Add in your marinara, Italian spice blend, salt, and pepper. Stir to combine thoroughly. Add in the spaghetti squash threads and 1 egg. Mix together thoroughly and then spread evenly in the skillet with a spatula. Sprinkle cheese over the top and add optional pepperonis.

  5. Place the loaded spaghetti squash in the oven and bake for 30-35 minutes or until the cheese is melted and bubbly, with a golden brown hue. Serve in a bowl alongside a salad and/or garlic bread.
