Simple Roasted Asparagus
Roasting vegetables is one of the most ridiculously easy ways to prepare them.
I'm not entirely sure what magic is being done in the oven when they cook, but roasting asparagus is WAY more flavorful than steaming or even sautéing them.
The important thing to know about roasting asparagus is: don't overthink it.
A little olive oil and salt and pepper is my favorite. The only other thing I sometimes sprinkle on is a bit of a dairy-free parmesan cheese. That's it!

Simple Roasted Asparagus
makes 2 servings
Ingredients:
1 (12 oz) bundle of asparagus
large pinch of salt
large pinch of pepper
1 tbsp olive oil
Instructions:
Preheat oven to 400 degrees.
Cut off the bottom 1 inch of the asparagus stalks since this part is usually stringy.
Spread asparagus in an even layer on a baking sheet. Drizzle with olive oil, salt, and pepper. Use your hands to toss altogether to ensure that every asparagus stalk is coated.
Roast in the oven for 15 minutes. That's it Voila!!
