The Best Classic Meatloaf
Meatloaf. You either love it or cringe at the mere mention of it. It’s definitely one of those dishes that seems to divide dinner tables.
But what if I told you that meatloaf could be so much more than what you remember. Picture this - Juicy ground beef, infused with the perfect blend of spices and seasonings, a delicious ketchup glaze on top, each bite melting in your mouth. Ingredients:
2 pounds ground beef
1/2 yellow onion, finely chopped
2 eggs
2 tablespoons ketchup
3/4 cup breadcrumbs (I use Schaar gluten-free bread crumbs)
1/2 cup milk
1 teaspoon Italian seasoning
2 teaspoons salt
1/2 teaspoon pepper
Meatloaf Sauce
1/2 cup ketchup
Drizzle of honey
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
Directions:
Preheat oven to 375 degrees and line a loaf pan with parchment paper.
In a large bowl, mix together all the ingredients for the meatloaf. Mix together thoroughly making sure all ingredients are incorporated well. Form a loaf with the meat and place gently into your loaf pan. Do not add meatloaf sauce yet.
Bake in the oven for 40 minutes.
While the meatloaf is cooking, mix together your ingredients for the meatloaf sauce. After 40 minutes of baking, take the meatloaf out. Then, spread sauce over the top of the meatloaf and continue cooking for 10 to 15 minutes or until a meat thermometer confirms the meat is cooked thoroughly.
Cut into even slices and serve warm alongside your favorite green veggie and mashed potatoes.
