Copycat Reese's Peanut Butter Cups

First up...our copycat Reese's Peanut Butter Cups. A peanut butter filling covered in creamy milk chocolate and a pinch of sea salt. Our secret ingredient? Lily's no sugar added dark chocolate chips. We are a huge fan of this brand that is botanically sweetened with erythritol so you get delicious chocolate with less sugar. Can’t find this brand, no big deal. Regular chocolate chips work great too. You are just 5 ingredients away from amazing homemade Reese's peanut butter cups!
Ingredients:
1 bag LILYS brand dark chocolate chips (no sugar added)
1 tbsp coconut oil
1/2 cup creamy peanut butter or cashew butter
Splash of almond or vanilla extract
Pinch of sea salt
Directions:
Fill a mini cupcake pan with parchment liners.
Put the chocolate chips in a double boiler or a microwave safe bowl with the coconut oil. Heat until chocolate is fully melted.
Pour a thin layer of the melted chocolate into each cupcake tin, about 1/4 of the way full. Place in freezer for 10 minutes.
Meanwhile, in a bowl, mix together the peanut butter or cashew butter and almond or vanilla extract. Take the cupcake pan out of the freezer. Top each frozen layer of chocolate with a small scoop of cashew butter mixture and top with another layer of melted chocolate. Top each cup with a pinch of sea salt.
Put cups into the freezer for about 20 minutes and then transfer to the fridge for another 30 minutes. Keep refrigerated for up to a week.
