Mason Jar Pesto Pasta

We LOVE mason jars and meal prep. 

Aint nobody got time to spend hours in the kitchen making gourmet lunches and three course dinners! Well maybe some people do, but we're guessing you're not one of them! We surely aren't!

As busy stay at home moms running our own business, lunch time is the time of day that we can check so much off of our to-do list.

Anyone else totally forget to take the time to feed yourself?

We've definitely been there. How do we make sure to nourish ourselves?

MASON JAR MEAL PREP!!! Aka our LIFESAVER!

Prep a few of these over the weekend and you'll have healthy lunches set for the week.

Mason Jar Pesto Pasta

makes 1 serving

Ingredients:

  • 3 tbsp pesto

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup chickpeas

  • 1 zucchini, spiralized or chopped

  • 1 cup of gluten free noodles (optional, but yummy!)

  • 1 cup packed spinach

  • 1 tbsp hemp seeds

Instructions:

  1. In the mason jar layer items in the order listed above starting with the pesto at the bottom of the jar. 

  2. Make sure to cover mason jar with an air-tight lid and keep in the refrigerator for up to 5 days.  

**NOTE - a quart-sized wide mouth mason jar is our favorite to use for this salad, but you can use any air-tight container to store this salad.
