Slow Cooker Beef and Broccoli

Juicy, tender beef with fresh broccoli and a garlicky soy sauce - this Slow Cooker Beef & Broccoli is better than takeout! It’s crazy-easy with 9 quick ingredients that all get thrown in the crockpot - no searing or pre-cooking required. Throw and go dinners are our favorite kind! Serve alongside fluffy white rice or cauliflower rice and you’ve got yourself an amazing well-balanced dinner.

Ingredients:

  • 1.5 teaspoons baking soda

  • 1.5 pounds flank steak

  • 1 cup beef bone broth or regular beef broth

  • 2/3 cup coconut aminos or soy sauce

  • 1/3 cup honey

  • 1 tablespoon sesame oil

  • 1 teaspoon sriracha or a pinch of red pepper flakes

  • 4 garlic cloves, minced or 4 Dorot frozen cubes of garlic

  • 4 tablespoons arrowroot or cornstarch

  • 4 tablespoons water

  • 3 cups fresh broccoli (about 1 large crown)

  • Cooked white rice to serve with

Directions:

  1. Thinly slice your flank steak into 1/4 inch strips. Sprinkle 1.5 teaspoons baking soda over the top and toss to coat. Let it sit for 30 minutes and then wash off the baking soda. This is called “velveting beef” and helps create really tender meat.

  2. Places slices of beef in the bottom of your crockpot.

  3. In a small bowl, whisk together the beef broth, coconut aminos, honey, sesame oil, sriracha or red pepper flakes, and minced garlic. Pour mixture over sliced flank steak.

  4. Cover and cook on low for 2 hours. If you cook too long, the meat may become tough. If you have a programmable Crockpot or Instant Pot, you can switch to keep warm at the 2 hour mark.

  5. After 2 hours of cooking time, whisk together arrowroot flour and water in a small bowl. Pour into crockpot and then also add your broccoli florets. Cook for 30 more minutes or until broccoli can be pierced with a fork.

  6. Serve alongside cooked white rice or cauliflower rice.
