Build Your Own Easter Egg Pancake
With Easter Sunday coming up, we wanted to create a new fun recipe that started the day with nature’s skittles - yes…the REAL plant colors of the rainbow.
Don’t get us wrong - our kids will have some candy filled eggs at their classic Easter egg hunts, but we think a breakfast featuring these adorable Build Your Own Easter Egg Pancakes is the best way to get a taste of the rainbow.
Ingredients:
1 box of your favorite pancake mix - we love Simple Mills or King Arthur’s brand
5 to 10 of your favorite in season fruits cut into small pieces. Examples: apples, strawberries, blueberries, raspberries, blackberries, pomegranates, oranges, kiwi, watermelon, peaches, nectarines, pineapples, pears, grapes.
Optional - honey or pure maple syrup to drizzle lightly on top
Directions:
Follow the directions for your favorite pancake mix. Heat a griddle and make the pancakes as normal. Once they are done and slightly cool, use kitchen scissors to cut the pancakes into an egg shape. You can make them large or small - totally your choice - but it is SO much easier to create an egg shape with kitchen scissors than to try and shape them on the griddle.
Cut up the fruit that you are using into different small pieces. Put each fruit into a different small bowl. Set up with your table with a plate of egg-shape pancakes and your bowls of fruit toppings.
Make a sample pancake for your kids to see or allow them to be creative on their own! You can spread a bit of honey on top of the pancake or drizzle on the final project.
